Invented by the team at Pennington’s Spirits & Liqueurs, the distillery behind our January 2021 Gin of the Month, Pennington’s Lakeland Moon Snowfell Gin, this is one gin-credible twist on the Moscow Mule.

It’s a marvellous cocktail that swaps the traditional spirit for a Mule, vodka, for our favourite tipple, gin, and adds Pennington’s Gingerbread Liqueur and a measure of Peach Schnapps.

We can’t get enough of this utterly delicious tribute to Pennington’s home in the Lake District, where the village of Grasmere is famed for its gingerbread.



Pen-Gin-Tons Mule

The key to this tasty tipple is the Pennington’s Gingerbread Liqueur. Its warm spice and bright citrus notes are perfect for any winter cocktail, but here, they are a wonderful bridge between the rich juniper-forward flavour profile of the gin and the fruity tones of the Peach Schnapps. The ginger beer then gives an extra fizzy kick of ginger and the fresh zing of lime juice lifts everything up beautifully.

Ingredients

60ml Pennington’s Lakeland Moon Snowfell Gin
35ml Pennington’s Gingerbread Liqueur
15ml apricot schnapps (optional)
Juice of half a lime
Ginger beer, to top up
Fresh lime wedges or orange peel, to garnish
Cranberries and rosemary, to garnish (optional)

Method

Fill a mixing jug and a highball glass with ice. In the mixing glass, add your gin, Pennington’s Gingerbread Liqueur, schnapps (if using) and lime juice. Stir until chilled, then strain into a glass. Top up with ginger beer, garnish and serve.
