There are a host of gin cocktails that require crushed ice, these include Bramble, Collins and the ever so tasty Gin Gin Mule!. Every month, we refresh our members’ memories when it comes to a key cocktail-making skill. We’re feeling romantic this month, so let’s talk about our crush!

When to use Crushed Iced?

A heap of crushed ice is instantly refreshing, and will tone down strong flavours in spirits forward drinks. It will also thin out thicker ingredients like syrup and purées so that they blend more easily with your cocktail.

Steer clear of crushed ice when shaking a cocktail – it will melt too fast in a shaker, leaving you with a watery mess – and when making drinks that won’t be consumed within 20 minutes. Here are 3 super easy steps to making crushed ice at home!

How to Make Crushed Ice

Plastic Bag and Crushing With Rolling Pin

Fill a resealable bag (the kind you might use for sandwiches) with water. Seal the bag, and place it in the freezer for three hours. Then hold the bag under running hot water. This will cause the ice to crack. Bash the bag lightly with a rolling pin to finish the job.

Crushing It Using A Tea Towel

Get out your trusty ice cube tray, fill it with water and pop it in the freezer for about three hours. Lay a clean tea towel down on a work surface. Place a handful of ice cubes onto the centre of the towel. Fold the four corners of the towel inward, tying them together tightly with a rubber band. Take a large rolling pin, and carefully whack the bundle of ice for approximately five minutes or until crushed.

In a Blender or Food Processor

Place a handful of ice cubes into a food processor or blender. Set the machine on the ‘pulse’ setting, in three-second spurts. In under a minute, your crushed ice will be ready

METHOD

Pack a cocktail shaker with ice, and muddle with simple syrup and 1 sprig of mint. Add the gin, and shake well for 30 seconds. The cocktail shaker should feel cold in your hands. Strain into a highball glass or copper mug filled with freshly crushed ice. Garnish with the remaining mint and wedge of lime

INGREDIENTS

2 sprigs of mint

15ml simple syrup

50ml gin

Crushed ice

30ml ginger beer

Lime wedge, to garnish
