Rhubarb & Ginger Gin and Lixir Tonic Water Ice Lollies

Balancing rhubarb’s scrumptious tartness with sweeter notes and the zingy fragrance of ginger, these ice lollies an absolute joy!

Rhubarb & Ginger Gin and Lixer Tonic Water Ice Lollies

Ingredients

5 sticks of rhubarb
50g of sugar
50ml gin (we recommend Tarquin’s Rhubarb & Raspberry Gin)
25ml lime juice
Lixir Rhubarb & Ginger tonic water

Method

Chop your rhubarb into small pieces and add to a pan with the sugar. Stir on medium heat until the rhubarb has broken down to a jam-like consistency. Sieve the rhubarb into a pouring jug, pressing down and scraping the underside of the sieve to get as much juice as possible. Add your gin and lime juice. Stir to combine. Pour into your lolly-pop moulds evenly and then top up with your Lixer Rhubarb & Ginger tonic water. Stir then add your lolly stick. Leave to freeze overnight or for at least 8 hours. Delicious!
