If you love the refreshing flavours of the classic Mojito cocktail, get ready for your new favourite tipple with this delicious lemon gin version!

It’s super easy to make this simple cocktail at home with just a few basic ingredients - no shaker required! We like to use crushed ice for maximum summer vibes but cubes are totally fine too.

One tip is to make sure that, when muddling your mint leaves, you crush them just lightly enough to release the aromatic oils (where all the flavour is) but not so much that they turn into a bitter, sludgy mess!

We would recommend using a citrus-led gin for this cocktail recipe, but a classic London Dry will also work beautifully. Cheers!

Lemon Gin Mojito

50ml citrus-led gin
Juice of 1/2 lemon (or more, to taste)
10ml simple syrup*
6-8 mint leaves
Lots of ice (crushed or cubes)
Sprig of mint and lemon slice, to garnish
Soda, to top up

Muddle the mint leaves in the bottom of your gin glass. Add your gin and simple syrup, then squeeze the juice from half the lemon and give a gentle stir, then fill your glass with ice. Top up with soda water and garnish with lemon and mint to serve. Add a little more lemon juice if desired!

You can buy simple syrup online or make your own by combining 100ml water with 100g caster sugar and heating very gently until the sugar dissolves and you are left with a thin syrup. Leave to cool before using.
