Having immediately tucked into - and quickly demolished - the delicious Tyrrell’s Veg Crisps we sent to our members in our Gin of the Month box for April 2020, we got to thinking - what if we could invent a couple of delicious cocktails using the veggie flavours inspired by these tasty root vegetable snacks?

After all, what could be a better tipple to sip on while nibbling on the Veg Crisps than one using the very same ingredients?!

So, we set to the task and came up with a couple of corkers!

Don’t be scared to try vegetable juice in your gin cocktails - they simply add a unique flavour and texture - it doesn’t taste of vegetable soup! Rather, these drinks are light, refreshing and look great, to boot.

If you like whisky or gin sours, give our Beetroot Beauty a go. The fresh beetroot juice gives the drink some added body and texture, a layer of earthy flavour and, of course, a spectacular purple colour!

Balancing the beetroot is the mint and lemon, both combining to provide a zingy, refreshing taste and a little complexity. (We recommend using just two or three mint leaves so as not to overpower the other ingredients.) Topped off with the smooth, clean gin, and you have a truly refreshing summer drink!

Our second vegetable juice creation is the Campari & Carrot - another delightfully refreshing, slightly floral and aromatic cocktail.

The carrot juice gives the drink a yummy sweet-savoury complexity that pairs really well with the floral notes of the honey. We added just 1 teaspoon of Campari to make the drink more rounded and balanced, but you could try it without if you prefer. Similarly, we’ve suggested infusing the honey with cardamom for an extra, very subtle layer of spice, but you could use normal runny honey instead, if you prefer.

Beetroot Beauty

50ml gin
25ml beetroot juice
15ml sugar syrup
20ml lemon juice
3 mint leaves
Mint leaf or beetroot leaf, to garnish (optional)

Glassware: coupette or rocks/water glass

Add all the ingredients to a shaker with ice and shake well. Double strain into your gin glass and garnish with a mint or beetroot leaf, then serve!

Campari & Carrot

40ml gin
5ml Campari
50ml carrot juice
15ml lime juice
15ml cardamom-infused honey* (or normal, runny honey if you prefer)
Soda water, to top up
Lime wheel, to garnish

Glassware: Rocks glass

Add all the ingredients into your glass along with plenty of ice, and top with soda water. Give a quick stir and garnish with a slice of lime.

*For the cardamom honey: Add a few cardamom pods in a pan with boiling water and let it simmer for about 10 minutes. Discard the pods and add 1 part of the flavoured water to 5 parts of honey (e.g. 50ml water to 250ml honey) and your syrup is ready to go. Leftover syrup can be stored in the fridge.
