Summer is upon us and we are craving something sweet...and ginny of course! This strawberry gin sorbet ticks all of our boxes this summer and it is sooooo easy to make!

Strawberry Gin Sorbet

Ingredients:

1kg strawberries
175g honey
100ml-125ml you favourite craft gin

Method:

Freezing the strawberries first will give your sorbet a smoother texture than if you were to make it using fresh strawberries. We recommend you freeze your strawberries for at least 3 to 4 hours, laid out on a tray, or use an ice cube tray to make sure you don't lose any in the freezer!. Make sure you wash and hull the strawberries before freezing.

Once frozen, blitz the strawberries in a food processor until smooth, along with the honey and gin. You may have to do this in batches, depending on how big your food processor is!

Make sure everything is mixed well together and pour the mixture into a freezer proof bowl/tub to go in to the freezer for 5 to 6 hours, or over night

Serve in either sundae or Martini glasses and garnish with a sprig of mint.
